We were invited to a friend’s for dinner recently and were served the most delicious dessert. Our host simply took slices of mango which she had frozen and put them through her Norwalk juicer. It was as creamy as ice cream, just as delicious and so much healthier. She peels and cuts various fruits, puts them in ziploc bags and freezes them so they are ready to make into fruit cream whenever she desires.
I don’t have a juicer, but this morning I peeled two bananas, sliced them, and froze them. After dinner, I placed them in my blender and added just enough rice milk to keep them moving and blended them until smooth. I think almond milk or fruit juice would have worked nicely, as well. The fruit cream made with the juicer had more the consistency of ice cream, but still, this was an enjoyable treat after our simple dinner of black beans, veggies and brown rice.
