We have the sweetest little 3 year old in our life, but he is one fussy eater. So, I’m always looking for ways to get vegetables into him when he comes to spend the day. This sweet potato and apple fruit leather is perfect, and he loves it.
All about Fruit Leather
Fruit leather is a great treat that is simple to make. It is pureed fruit (and/or vegetables) that is spread thin and dehydrated until leathery. Sometimes a sweetener is added, depending on the sweetness of the fruit or vegetables you are using.
It’s a perfect snack for anytime, but especially when you are on the go. Since they’re dehydrated, there’s no need for refrigeration.
I prefer homemade fruit leather since I can control the ingredients. It’s true, there are some good ones available commercially, but homemade is so much less expensive.
Using organic fruit and vegetables in my sweet potato and apple fruit leather is important to me. Since dehydrating the fruit concentrates it, using product with pesticides means that those will be more concentrated in the final product as well. (Yes, one apple will have the same amount of pesticides as one apple’s worth of fruit leather, but we tend to eat more of the fruit leather so we are getting more pesticide).
More Than Just Sweet Potato and Apple
The combinations you can turn into fruit leather are only as limited as your imagination. My mind has been spinning with combinations that add vegetables. Pear and spinach. Strawberry and beet. Or how about apricot and butternut squash? Yum!

Ingredients
Instructions
- Puree all ingredients until smooth. A small amount of water may be needed to blend smoothly.
- Pour onto 2 dehydrator sheets or parchment paper. Spread thinly and evenly, and dehydrate at 100°F until leathery. Higher temperatures may be used, but they will destroy the enzymes in the raw honey.

I don’t cook anything, but this is a great idea. I’m going to try simply blending sweet potato and apple and dehydrate it ….. Thanks for the idea!

How long does it take in the oven?

I’m sorry, Julie, I haven’t made any in the oven. It would depend on how thick you spread the puree, and how low your oven temperature can go. Just keep your eye on it until it’s leathery, but not crisp.

Can you tell me how to dehydrate in an oven if I don’t have a dehydrater?

Lisa, the most important thing when drying is an oven is keeping the temperature low – under 150°F, if possible. Some ovens just don’t go that low.

So far I have made Pear-Spinach and Apple-Carrot. No sweetner or honey added! 2 year old Loves them! She ate 1/2 the sheet tray of the Pear-Spinach last night while waiting (impatiently) for the Apple-Carrot to be done. I added a squeeze of lemon juice since both pear and apple brown with exposure to air. Otherwise We Love our (oven-baked) fruit leathers! Thanks for the post 🙂
~2-2.5C of blended fruit-veggie (including some water so it doesn’t wreck my blender) +squeeze of lemon juice=1 sheet pan, baked @lowest setting 170deg

About how long in the dehydrator does it take?

There are a lot of variables that will determine the time – the type of dehydrator you are using and the moisture in the air are the 2 most important. But at the low temperature I recommend, it can take 12 or more hours.
